I must confess, before Virginia was born, little Ms. Isabella had a hot breakfast everyday. Pancakes were always her favorite, though we'd mix it up with waffles, eggs, and fresh scones. In fact, I'd make the batter before heading out to work and the Mr. would do the actual cooking, while letting Isabella play sous chef and sprinkle in some mini chocolate chips.
Well, no one clued me into to the challenge of balancing life with two children. Cereal has made it's way into our morning routine (we love Kashi's Honey Sunshine), but I also try to make a double batch of pancakes at the start of the week, so we can just pop them into the toaster for a quick, homemade breakfast. Trader Joe's makes a great tasting maple agave syrup blend that's also a lot less expensive than pure maple syrup. We've even topped them with some peaches I canned over the summer.
On that note, I've also decided to make my pancake mix and give it as gifts this holiday season. I'm amazed at how many friends use a boxed mix—I'm guessing they don't know how easy they really are to make from scratch. I'll package the mixes in either clear cellophane bags or mason jars with a note to add 1 beaten egg, 1/2 to 3/4 cup milk, depending on if they like them thick or thin, and 2 tablespoons melted butter to 1 cup of the mix. I'll feel good knowing I helped loved ones get their days off to a good start. I'll post my pancake mix recipe next week. For now, add these buttermilk ones to your "to cook" list...and make extra over the weekend to take some stress off getting ready for school and work on Monday morning.
BUTTERMILK PANCAKES
The key to making pancakes
is a hot pan and patience. The skillet is ready when water sprinkled on
it immediately forms tiny bubbles and evaporates. Patience is a crucial
virtue to making a crisp, golden pancake. Don’t flip them until bubbles
appear on the surface of each pancake.
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
1 egg, lightly beaten
2 Tablespoons butter, melted
Combine flour, sugar, baking powder, baking soda and salt in a medium-size
bowl and whisk to combine; set aside. In a small glass bowl or
measuring cup, combine buttermilk, egg, and melted butter. Stir with a
fork, using the same motion as scrambling an egg until liquid
ingredients are well mixed.
Pour liquid ingredients into dry and stir, gently, using the same form until mixture is just combined. It will be lumpy, and that’s okay, just make sure there are no pockets of unmixed dry ingredients.
Heat a skillet over a medium flame. Coat pan with a pat of batter and add circles of batter. Use a teaspoon to make kid-friendly silver dollar style or a tablespoon for dad size cakes. Flip when bubbles form on top and edges start to look dry; continue cooking for 30 to 45 seconds or until done.
Mmmm. I might have to give these to myself this weekend:)

I have gifted a mix similar to this, but mine had powdered buttermilk. It was a hit!!

What a great idea, gifting pancakes. My oldest son loves pancakes. Never thought about it but you are right so many people use boxed and they are so simple to make from scratch.
